Tandoori Chicken

Tandoori chicken is a popular Indian dish known for its vibrant red color and smoky flavor. Traditionally, it is made by marinating chicken pieces in a mixture of yogurt and spices and then cooking them in a tandoor (clay oven). However, you can also make a delicious version of tandoori chicken at home using a regular oven or grill. Here's a recipe to guide you:

Ingredients:

  • 4 chicken leg quarters or 8 chicken drumsticks
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons tandoori masala (a blend of spices readily available in stores)
  • 1 tablespoon ginger-garlic paste (or finely minced ginger and garlic)
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika or Kashmiri red chili powder (for color, adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon salt (adjust to taste)
  • Fresh cilantro leaves, for garnish
  • Lemon wedges, for serving

Instructions:

  1. Make deep cuts in the chicken pieces using a sharp knife to allow the marinade to penetrate.
  2. In a large bowl, combine yogurt, lemon juice, oil, tandoori masala, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, paprika or red chili powder, garam masala, and salt. Mix well to form a smooth marinade.
  3. Add the chicken pieces to the marinade and coat them evenly. Make sure to rub the marinade into the cuts for maximum flavor. Cover the bowl and refrigerate for at least 2 hours, or overnight for the best results.
  4. Preheat your oven to the highest temperature (usually around 450°F or 230°C) or preheat your grill to medium-high heat.
  5. If using an oven, place the marinated chicken pieces on a baking sheet lined with aluminum foil or a greased wire rack. If using a grill, place the chicken directly on the grates.
  6. Cook the chicken in the preheated oven or grill for about 25-30 minutes, or until the chicken is cooked through and charred on the edges. Flip the chicken pieces halfway through cooking to ensure even browning.
  7. Once cooked, remove the chicken from the oven or grill and let it rest for a few minutes.
  8. Garnish the tandoori chicken with fresh cilantro leaves and serve hot with lemon wedges on the side. It pairs well with naan bread, rice, or a fresh salad.
